Saf Instant Gold Yeast is a special formulated instant to provide a faster fermentation in high sugar dough (sweet bread) or high acidic dough (sour doughs). It is highly recommended for use in doughs with sugar levels of more than 7% on flour weight.
It is used as a leaving agent in baking and other bakery products where it converts the fermentable sugars presents in the dough to Co2 (carbon Dioxide) and ethanol. It is derived from the Saccharomyces cerevisiae.
