This is a granular free flowing yeast for use in doughs with sugar levels of up to 6% on flour weight. It gives you uniform fermentation throughout your baking process.
It is used as a leaving agent in baking and other bakery products where it converts the fermentable sugars presents in the dough to Co2 (carbon Dioxide) and ethanol. It is derived from the Saccharomyces cerevisiae.
